It may not feel like summer anymore, but I'm still clinging to every last moment of it. A big part of my summer love is the amazing, abundant fruits and vegetables that come with it. Luckily, we are still in prime time for summer foods - corn, tomatoes, peaches and so much more! I've been feeling inspired by every ingredient, and a simple, fresh style of cooking. This salad captures that feeling. I was craving watermelon gazpacho, but didn't have tomatoes (which are not quite in season yet anyways) so I came up with this salad, which has the same refreshing quality. It's a great accompaniment to pretty much all summer foods - burgers, tacos, you name it!
- 2 cups seedless watermelon, cut into small cubes
- 2 cups English cucumber, cut into small cubes
- 1/4 cup red onion, diced
- 3 tsp lime juice
- 2 tsp olive oil
- 1/4 tsp salt
- 1/4 cup feta
- 12 fresh mint leaves, thinly sliced
- Dash of pepper
In a bowl, combine the watermelon, cucumber, and red onion. In a separate small bowl, mix together the lime juice and olive oil. Pour over the salad. Sprinkle with salt and pepper. Toss to combine. Top with feta and mint leaves. Serves 4.
