One of my favorite summer activities is a picnic in the park, and I'm always saving ideas for the perfect picnic food. This simple recipe mixes two favorite snacks into one - edamame and hummus! I love it served with pita chips at a potluck picnic or summer party. It also makes a healthy afternoon snack when combined with veggies. It's super easy to whip up and much more exciting than the basic store bought variety.
- 1 1/2 cups frozen shelled edamame
- 3/4 cup tahini
- 1/4 tsp cumin
- 1/2 tsp salt
- juice of 1/2 lemon
- 1/2 tsp lemon rind, grated
- 2 cloves garlic, grated
- 1 tbsp water
- 1 tbsp olive oil (plus extra for drizzling)
Boil edamame according to directions on package. Drain and let cool. Once cool, combine all ingredients in a food processor. Pulse until smooth. Serve with a drizzle of olive on top.
