Double Rose Strawberries and Cream

Few things make me happier than fresh strawberries from the farmer's market (or better yet, picked yourself at the strawberry farm).  Right now we are in peak strawberry season, and the fresh, local berries are so perfectly juicy and sweet.  This is a super simple dessert I made to take advantage of my farmer's market bounty.  The strawberries don't need much, but this adds just a little something special, with two of my favorite flavors, rosé and rose water.

Ingredients

  • 4 cups strawberries, sliced
  • 2 tbsp rosé wine
  • 2 tsp granulated sugar
  • 1/2 cup heavy cream
  • 1/2 tsp powdered sugar
  • 1/4 tsp rose water

Put a mixing bowl and beaters in the freezer to chill.  Meanwhile, put the sliced strawberries in a separate bowl.  Sprinkle with the granulated sugar and rosé, and toss gently to mix.  Let the berries sit for about an hour (you can drink the rest of the rosé while you wait!).  Take out your ice cold mixing bowl and beaters, and pour the heavy cream in to the bowl.  Attach the chilled beaters to your mixer, and beat the cream on medium speed until soft peaks begin to form.  Add the the powdered sugar and rose water, then mix for a few seconds more, until you get a perfect whipped cream texture.  Divide the strawberry mixture into 4 bowls, and top each with a generous dollop of the rose flavored whipped cream.  Serves 4.
