World's Best Brussel Sprouts

Fridays in our house often involve ordering take-out tacos from our favorite local spot.  I usually get a side of brussel sprouts (because of course a Brooklyn taco place has brussel sprouts!).  I add them to the order partially to pretend I'm being healthy, and partially because their version is super delicious.  When the brussel sprouts disappeared from the menu for awhile, I was missing them so much I decided to try and create my own at home.  Somehow, my homemade attempt came out even yummier than the original!  It truly lives up to the "World's Best Brussel Spouts" title.  They are super crispy, a little spicy, and totally addictive.  This recipe serves 4 but you might want to make double, they are that good!

Ingredients

  • 1 lb brussel sprouts
  • 4 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp chopped canned chipotle pepper
  • 4 tsp apple cider vinegar
  • salt & pepper
  • 1/4 cup queso fresco
  • 2 tbsp chopped peanuts

Preheat oven to 400 degrees.  Heat a cast iron skillet over medium heat.  Trim and discard the ends of the brussel sprouts, then slice them in half.  Add olive oil to the skillet.  Place brussel sprouts in the skilled with the cut sides down.  Add garlic.  Cook for 5 minutes until the cut sides are browned.  Transfer the pan to the over, and roast for 20 minutes.  Whisk together the vinegar and chipotle pepper.  Pour vinegar mixture over the brussel sprouts after they come out of the oven, then stir it up and top with the queso and peanuts.
