Blackberry Lavender Syrup

My assistant makes the world's best iced teas, and brings them to work for special celebrations.  Her secret is adding homemade fruit syrups.  This is my variation on that idea, a summery sweet syrup that is a great addition to all sort of drinks.  I love it mixed with selzer for a blackberry-lavender spritzer, or swirled with champagne for an extra fancy bellini.  It would also be great added to lemonade, cocktails, or of course, iced tea!

Blackberry Lavender Syrup

Ingredients

  • 1 1/2 cups water
  • 2 pints fresh blackberries
  • 3/4 cup sugar
  • Juice of 1/2 lemon
  • 1/4 tsp lavender extract

Combine water, blackberries, and sugar in a large sauce pan and bring to a boil.  Simmer for 18-20 minutes, stirring occasionally and pressing on the fruit with the back of the spoon to crush.  The fruit will start to dissolve into the syrup.  Once the mixture is reduced to a slightly thicker, syrupy consistency, remove from heat and let cool.  Once it has cooled to room temperature, strain through a fine mesh sieve to remove the blackberry seeds.  Add lemon juice and lavender extract.  Store in a jar or glass bottle.  It will keep for several weeks.
