After a bit of a winter hibernation - I'm back with new posts and spring fever!  With the slowly warming weather and general spring vibes, I'm reassessing how to be healthy and take care of myself - eating better, drinking a little less, and getting in my exercise.  Nothing radiates healthy vibes quite like a fresh green juice.  I could never do a full on juice cleanse (the hangry vibes would take over!), but I do like a glass as a Monday morning reset to get me on track for a healthy week.  I started making them at home because they are usually super expensive to buy, and I've come up with a homemade version that is truly my favorite.  It has extra gingery goodness that gives it a little kick and is also super good for you.  You'll need a juicer to make it at home.  We have a fairly basic Breville juicer that does the trick.  If you do this on the regular, it will pay for itself!  It's best to drink it as fresh as possible - you can store overnight but it won't hold up much longer than that.  Cheers to spring!

Ingredients

  • 1 bunch kale
  • 4 large apples, halved
  • 2 lemons
  • 2 knobs of ginger (about as big as your thumb)

Remove the peel from the lemons and ginger with a small knife.  Juice apples and kale first, putting pieces of kale in with each apple half - you get more juice from the kale this way.  Put ginger and lemons last - the ginger can clog the strainer, so by putting it last you get more juice from everything else.  Drink fresh or store overnight in a jar or bottle.  Makes 2 servings.
