I'm on a marshmallow kick, which inspired me to make my favorite treats that are impressive yet fairly quick and easy to make - s'mores pops! Served in fun cupcake liners, they look super cute, like a cross between bon-bons and cakes pops. I promise you will not be able to eat just one!
- 16 marshmallows
- 3 milk chocolate bars (1.55 oz each)
- 6 graham crackers, crushed
- lollipop sticks
- 16 mini cupcake liners
Line a cookie sheet with parchment paper. Put a lollipop stick into each marshmallow and set on the cookie sheet. Put the graham cracker crumbs in a shallow bowl. Next, set up a double boiler for the chocolate. You can use a saucepan and a heat-proof bowl. Fill the saucepan with water so that if you set the bowl on top, it will not touch the water. Bring the water to a boil. Meanwhile, break the chocolate bar into pieces in the bowl. Set the bowl on top of the saucepan and stir until the chocolate is melted. Remove from heat. Dip each marshmallow in the melted chocolate, and then into the graham cracker mixture. Set on the parchment paper to harden for at least an hour. If you have extra chocolate, you can dip berries or banana slices in it for a bonus treat! Once set, serve the s'mores pops in mini cupcake liners. Note - I used fancy marshmallows because I had them around, but the regular kind are equally good!
