Watermelon Pink Lemonade

One of my favorite things to do on a Saturday afternoon is to wander down to the Brooklyn Flea, check out the vendors, and get a sweet, delicious watermelon agua fresca from one of the food stands.  Now that summer is here, I have been buying giant watermelons for my little house of two, and using them to make everything from watermelon arugula salads to tasty popsicles.

There's usually plenty of watermelon left to use for its finest purpose - refreshing drinks!  I decided to take it one step beyond my favorite agua fresca treat, and mix in fresh lemonade for the ultimate summer combo.  The watermelon also gives the lemonade a pink tint (since everyone knows that pink lemonade is the best kind!).  This recipe makes enough for 2, and can easily be turned into a cocktail with a splash of vodka.

Ingredients

  • 1 1/4 cups fresh squeezed lemon juice
  • 1 1/2 cups cubed watermelon
  • 1 1/4 cups water
  • 1/3 cup simple syrup
  • fresh mint

Puree watermelon and 1/4 cup of water in a blender (you don't need much water because, true to its name, the watermelon will easily liquify).  Strain through a fine mesh sieve to remove the pulpy bits.  Combine the remaining watermelon juice, the additional water, and all other ingredients.  Stir together, pour over ice, and garnish with mint and sliced lemon.  Drink up!
