Cold Breakfast For Hot Days

It's officially Memorial Day, and summer is in the air!  The warmer weather has me craving lighter (and colder!) breakfasts.  One of my favorites is an acai bowl.  Though acai bowls are a popular breakfast in hotter climates,  they don't seem to have caught on yet in New York, so I've taken to making them at home.  It's like a delicious cross between a smoothie and a yogurt parfait.  Here's my method so you can make your own acai bowls too!  The recipe below serves 2 so you will have enough to share (trust me, you will be glad there is enough to go around).


  • 3 acai frozen smoothie packs*
  • 2 frozen bananas, chopped in to pieces before freezing
  • 1/2 cup coconut milk or almond milk
  • granola
  • additional fresh banana

Let the acai smoothie packs and frozen bananas rest for 15-20 minutes at room temperature to make them easier to blend.  Put them in the blender with the milk and pulse until everything is thoroughly combined, like a very thick smoothie.  You may need to add a little more milk, but be careful not to add too much, as you want it very thick.  One you have the desired consistency, pour in to 2 bowls.  Top each bowl with sliced fresh banana and a sprinkle of granola.  Enjoy!

*Note - you should be able to find the acai smoothie packs in the freezer section at your grocery store, near the frozen fruit.  If you can't find them, a mix of frozen berries would be a good substitute.
